Frequently Asked Questions

These are the most common questions we are asked. If you have a question that's not listed, please don't hesitate to get in touch.

 

Q. What areas do you cover?

 

We are based in St Leonards, East Sussex and cover the whole of the Sussex, Kent & Surrey.

 

We are prepared to travel further afield, however due to the cost of fuel, we do have to charge for the travel & staff time. We use google to calculate the distance, and charge 60 pence per mile from our establishment to your venue, return.

 

Q. How long does it take to cook, Carve and Serve?

 

As a general rule we cook each pig for 1 hour per 8KG, plus 2 hours. On average, it takes approximately 8-12 hours to fully cook a whole pig. We also allow the meat to rest for at least an hour during the cooking process, this helps the juices remain in the meat making it more succulent when it comes to carve and serving. Service depends on the number of guests you have. On average, it takes an hour to carve and serve 100 Pork Rolls. In most cases, the time from service to packing up is about 2 hours.

 

Q. What happens with any left overs?

 

At most events we do have meat left over and as this has been paid for by you then it's only fair that you get to keep it. We bring foil containers to each event that we carve any remaining meat into and leave it with you.

 

Q. How long do you require to set up before service?

 

We arrive at your venue at least 2-3 hours before service, which then gives us time to set and get ready to serve you and your guests. We start cooking in our kitchen at our establishment, and half way through we stop to let the meat rest. At this point, leaving it within the sealed oven, we transport it to your venue, and cook it for a further 2 hours. Some caterers say they "blast chill" and then use "turbo ovens" to reheat. This process requires the hog to be removed from the machine and placed into a chiller which exposes it to harmful bacteria and the potential for cross-contamination. We do not to use this method as any meat that is reheated can become hard and chewy and you loose the juicy flavours you expect from a Hog Roast.

 

We can fully cook on site, however we do have to charge extra as the staff have to remain with the machine to keep an eye on the hog as its cooking and this can be up to an extra 6 hours. Sometimes its also not practical to cook on site as for some early events, we need to start cooking at 3/4 o'clock in the morning.

Q. Why is there a big difference in prices with different companies?

 

Over the last few years, Hog Roasts have fast become more popular and many people are trying to take advantage and earn some extra cash. Most of the time, you will find they have old second hand machines, little or no knowledge on Hog Roast and are literally a disaster waiting to happen. We are a well established catering business, and are proud to have the industries highest rating of food standards.

 

We also have £10m public liability insurance, and are a reputable member of NCASS, the National Caterers Association.

 

All of our staff have a minimum of level 2 Food Hygiene, and are trained in the area that they work.

 

We have established a relationship with our suppliers and make regular visits to the farm and see the pigs grow. Unlike most other companies, we know first hand what we are getting, have seen the pigs before hand and can say that we know what we serve is excellent quality.

 

Always ask to see insurance and Food Standard Certificate before you commit to any booking

 

Q. Do I pay a deposit or the full balance?

 

A deposit is a security measure which binds the contract between the Caterer and the Customer. We request a 20% deposit to be paid at the time of booking and the outstanding balance needs to be settled 10 days before your event.

 

If you wanted to make things easier and pay a bit each month, we are happy to set up a payment plan and receive standing order payments. Please discuss this when booking and we will be happy to help you set this up.

 

We would recommend that you avoid any company that doesn't ask for a deposit or requests the full payment at the time of booking.

 

Q. Do you provide Plates, Napkins & Cutlery?

 

We supply everything that will be needed for the food side of your event. This includes Paper Plates, Napkins and if required cutlery. For most parties, we supply disposables, however for formal events like weddings and sit down meals we use China Plates and Silver Cutlery.

 

If you prefer to not have disposables at your event, we are happy to use our own crockery, however we have to charge a small fee to cover cleaning.

 

Q. Do you supply a Gazebo or Marquee?

 

Yes, we will bring a 3mx3m catering gazebo with us to every event as you can never predict the typical English weather. This marquee will provide adequate cover for our equipment, staff and most of all, your Hog Roast. We do have larger marquees for bigger events, and we can also hire these out should you require one.

 

Q. Do I need to supply anything?

 

We supply everything that we need for your event, however we may need access to a power supply depending on what services we are supplying. In most cases, we don't need power, but for larger events we do. We have a generator but this can be somewhat noisy, especially if you only have a small gathering.

Q. How can I tell you are a reputable company?

In today's world there are so many people trying to make a quick buck. This is okay if you want your walls painted, but when it comes to food, you should select a company that have everything in place.

We are full NCASS members (National Caterers Association) and this is the catering industries recognised Association. To achieve full membership, we have to provide them with Insurance, Gas Safety Certificates, Food Standards rating and even the policies we have in place to show that we not only know what we are doing, but are doing everything correctly.

We have full Public Liability Insurance for £10m, which is the minimum that most venues or hotels request. All of our staff undergo full Food Hygiene and safety training and the certificates can be found on our website.

Our machines are state of the art Commercial Spit Roasting ovens, and are Gas safety checked regularly to ensure they are compliant with gas safety regulations.

We are proud to be one of the few Outside Caterers who have achieved the top food standards rating (5-Excellent). We are registered and inspected by Hastings Borough Council.

We have feedback from many of our previous customers, and we often get booked again by them or their guests.

Q. Can we meet you before we confirm anything?

We do like to meet customers before events so you get the opportunity to meet us and vice versa. This gives you a change to ask any questions and discuss more in-depth about your event and what you would like us to do.

We cater at allot of public events, and can quite often be found at festivals and charity events. If you would like to come and sample some of our food, we are happy to give you a taster and see how we work. We post most of our public events on our Facebook page, so please feel welcome to come along and introduce yourself.
